The new Dew Point feature keeps track of condensation risk in your produce cartons.
So what exactly is the dew point? It is the temperature to which a given volume of air must be cooled, at constant pressure, for it to reach 100% relative humidity and for water vapor to condense into water drops. The condensed water is called dew and the dew point is the saturation point. If the temperature at any moment in time is below the dew point, water will have condensed on the surface of the fresh produce.
So what does this mean for Xsense users? Keeping your eye on the dew point and making sure it is always below the temperature line on the Xsense graph will ensure that your produce remains condensation free. Condensation on the surface of fresh produce is undesirable because it is conducive to microbial decay. It also forms a barrier interfering with normal gas transfer and it encourages regrowth of certain vegetables.
In summary, it is important to avoid reaching the dew point and the Xsense graph lets you know when you are approaching that critical moment in time.
